Kacy Fitch mixes up a devil of a classic cocktail.

 

The Diablo seems to have surfaced in California in the ’40s. It’s a bit like a margarita with a generous amount of citrus and that vegetal agave taste of good tequila. Then cassis adds a dark blackberry flavor, and the bubbly ginger ale makes the whole thing light and refreshing, the perfect hot weather drink. Kacy Fitch is the owner and bar manager at Zig Zag Café in Seattle.


1 1/2 ounce Reposado tequila                       

1/2 ounce fresh lime juice                                               

1/2 ounce crème de cassis                                                

Ginger ale                                   

Lime wedge                       

 

Combine tequila, lime juice, and crème de cassis in ice-filled shaker. Shake vigorously and strain into ice-filled Collins glass. Top off with ginger ale. Garnish with lime wedge.
